The initial conditions of the individual are decisive for the validity of the results, so the general objective was to select the sample by verifying certain inclusion conditions to obtain reliable data that would guarantee the effective development of the subsequent stage of the macro project (sweet cookie intake and blood glucose levels in non-insulin-requiring type 2 diabetic individuals). A survey was designed and administered for the inclusion of the individuals to be studied, with their prior consent, according to Article 15 of Resolution No. 8430 of 1993; inclusion and exclusion criteria, as well as the health status of the individuals, were defined. Ten type 2 diabetic individuals without drug therapy (hypoglycemic agents and insulin) who met the defined inclusion criteria were selected for convenience in order to observe the behavior of the studied food against a standard food (white bread without sugar). It was concluded that the average age of the selected type 2 diabetics was 65 years, with the majority tending to be obese due to various nutritional factors: poor eating habits, lack of medical supervision, and limited physical activity, among others.
