Abstract

Of great importance is the quantification of the flavonoids present in the orange peel of the Criolla variety from the Norte de Santander region, represented by the municipalities of Pamplonita, Cucutilla, Toledo and Pamplona and to estimate the effect of the area of origin on the development of these compounds phenolic in the same variety, as an alternative for use.To this end, representative samples were acquired from each of the places of origin in the supply center of the city of Pamplona, which were evaluated for initial humidity and color, then subjected to a drying process and milling to obtain flours assessing their physicochemical characteristics such as moisture, color, ash and fat, after which the quantification of total flavonoids was carried out with the spectrophotometry method using gallic acid as a standard at a wavelength of 320 nm, also establishing a comparison with the content of total flavonoids determined in the Valencian variety. It was identified that the areas of origin do directly affect the development of total flavonoids in the peels of oranges of the Creole variety, being significant the amount determined in the orange of the Criolla variety from the municipality of Pamplonita, however it presented a lower content of 65 mg acid equivalent Galica/100g compared to the Valencian variety.
