La revolución de la inteligencia artificial en la industria alimentaria: avances, desafíos y perspectivas hacia sistemas alimentarios inteligentes y sostenibles

Resumen

La industria alimentaria enfrenta retos crecientes relacionados con la seguridad, la sostenibilidad y la eficiencia. En este entorno, la inteligencia artificial (IA) emerge como tecnología clave para abordar estos desafíos. El presente artículo, revisa críticamente una serie de recientes avances en aplicaciones de IA, integradas con tecnologías disruptivas en el sector alimentario. Se identificaron áreas clave como seguridad alimentaria, trazabilidad, detección de adulteración, empaques inteligentes, percepción del consumidor y sostenibilidad. Se destacan beneficios obtenidos en el orden del monitoreo en tiempo real, análisis predictivos y automatización, señalando, además, desafíos en interoperabilidad, gobernanza de datos y aceptación social. Se sugieren líneas de investigación interdisciplinaria para avanzar hacia sistemas alimentarios inteligentes y sostenibles.
